It's Friday! For those of you that have been with me for awhile, you know what that means...yep a recipe. :D I found this one in a magazine, it is really super easy and yummy.
Tortellini Soup
1 Tbs. Olive Oil
3 Carrots, cut into 1/8" thick slices
2 ribs celery, cut into 1/4" thick slices
1 onion, coarsely chopped, should be about 1 C.
1 tsp. dried Italian seasoning
1/4 tsp. pepper
3 cans (14.5 oz ea.) garden vegetable broth
1 pkg. (13 0z.) frozen cheese tortellini
4 oz. baby spinach leaves, about 5 C.
In a large pot, heat oil over medium-high heat. Add carrots, celery, onion, Italian seasoning and pepper. Cook, stirring occasionally, until softened, 5-7 minutes.
Stir in broth; bring to a boil. Add tortellini; cook according to package directions until just tender. Stir in spinach; cook until just wilted, about 1 minute.
That's it, I told you it was easy. I added garlic to the soup when I made it and I pretty much just used the recipe as a guide line. I don't really follow the measurements, if a little more happens to fall in, it doesn't bother me. :) I'm sorry I don't have a picture, but I made this about 2 weeks ago. Enjoy!
